The effect of low temperature in enzymatic glycerolysis on monoglyceride concentration production using green emulsifier based refined bleached deodorized palm oil

The palm oil is a main commodity of plantation in Indonesia. It should be good potential to produce many downstream products based on oil. But the reality export rate crude higher than processing product. aim this study was analyse one i.e., green emulsifier. production used enzymatic glycerolysis method without anorganic catalyst. independent variables were reaction temperature 5, 10, 20, 35 and 55°C. dependent variable glyceride content (mono-, di- triglyceride) that analysed by Gas Chromatography method. Before reacting, first step characterization refined bleached deodorized (RBDPO) as material. regression determined using ANOVA with SPSS 2.0. If result significant, it would continued partial analysis graphically trending. results showed had significant monoglyceride but no effect triglyceride at alpha 10%. They show lower glycerolysis, obtained. advantage able high emulsifier need very strict control processing.
